Description
A fusion of the iconic Big Mac and crispy taco shells, this recipe features smashed beef on wheat tortillas, caramelized crust, and classic toppings like lettuce, pickles, and house sauce. Perfect for a fast, flavorful meal with a playful, family-friendly twist.
Ingredients
12 mini wheat tortillas
453g ground beef (15-20% fat)
12 slices American cheese (or Cheddar)
1/2 white onion, finely chopped
1 cup shredded iceberg lettuce
1/4 cup cornichons, sliced
2 tbsp special sauce (see note)
Optional: 1 tsp garlic powder or smoked paprika
Food oil for frying (optional)
Instructions
1. Preheat a cast-iron skillet over medium-high heat until smoking.
2. Place 1 tortilla in the skillet; add ~37g ground beef into the center.
3. Firmly smash the beef with a spatula to fully cover the tortilla, flattening any mounds.
4. Cook undisturbed for 1-2 minutes until the bottom is golden brown and crispy.
5. Flip the tortilla, add cheese slice, and cook 1-2 minutes until cheese melts.
6. Repeat with remaining ingredients, re-oiling the skillet if needed.
7. Top each taco with lettuce, pickles, onion, and special sauce (see note for recipe).
Notes
Use freshly ground beef for better texture. For crispier crusts, work in batches and keep skillet hot.
Special sauce recipe: Mix 1/4 cup mayonnaise, 1 tbsp ketchup, 1 tsp yellow mustard, 1 tsp relish, 1/2 tsp paprika, and 1/2 tsp vinegar until smooth.
Substitute thick, visually appealing cheese like provolone for extra flavor.
Can freeze assembled, uncooked tacos (without cheese) for up to 1 month.
