Description
A light, vibrant Mediterranean pasta salad featuring bow tie (farfalle) pasta, cherry tomatoes, bocconcini, red onion, spinach, and a lemon-pesto dressing. Perfect for quick summer meals or as a side to grilled dishes.
Ingredients
340g Bow Tie Pasta (Farfalle)
2 cups Cherry Tomatoes (halved)
1/4 cup Red Onion (finely diced)
1 cup Bocconcini Cheese (cut in half)
0.5 cups Fresh Spinach Leaves
2 tablespoons Pesto (traditional style)
1 tablespoon Olive Oil
Fresh Lemon Juice (to taste)
Salt and Freshly Ground Black Pepper
0.5 cups Grated Parmesan Cheese (optional)
Instructions
Cook Bow Tie Pasta according to package instructions for al dente texture, then drain thoroughly.
Toss cooked pasta with olive oil and a pinch of salt while still warm to prevent clumping.
Add halved cherry tomatoes, bocconcini, and red onion to the bowl.
Mix in pesto sauce, lemon juice, and a handful of fresh spinach.
Season with salt, pepper, and optional Parmesan before chilling in the refrigerator.
Stir well before serving cold.
Notes
Use whole wheat pasta for added fiber
Replace red onion with 1 shallot for a sweeter flavor
Store covered in the fridge for up to 5 hours
Best served chilled with a fresh lemon wedge garnish
