Ingredients
250 g ground chicken
8 mini tortillas
1/4 cup breadcrumbs
8 slices of fresh mozzarella
1 cup homemade tomato sauce (olive oil, garlic, fresh basil, salt, and pepper)
2 tablespoons shredded pecorino Romano
1 cup arugula (rocket lettuce), for garnish
1 teaspoon Italian seasoning mixture
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat a large skillet over medium-high heat for 2 minutes
Place 2 mini tortillas in the skillet and gently press with a spatula to create a slight indentation
Add 2 tablespoons of ground chicken to each tortilla, shaping into a thin patty
Sprinkle 1 tsp breadcrumbs, 1/2 tsp salt, and 1/4 tsp pepper over each chicken patty
Top each with 1 slice of mozzarella and cook 3-4 minutes until golden and crispy
Flip the tacos carefully, press again briefly, then cook 2-3 minutes on the other side
Remove from heat, drizzle 2 tablespoons of tomato sauce on each taco, and garnish with 1 tsp shredded pecorino and 1/4 cup arugula
Notes
Use turkey mince for lighter flavor
Corn tortillas preferred for authentic taste
Adjust cheese amounts based on dietary preferences
For a vegetarian version, substitute chicken and cheese with plant-based alternatives
