Description

Juicy smashed chicken tacos meet tangy dill pickles and a protein-packed ranch sauce, crowned with a crispy cheese lace. A vibrant, high-protein fusion dish balancing crunch, creaminess, and zesty flavor.


Ingredients

1 lb (450g) ground chicken
1/2 cup diced dill pickles
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp chili powder
Salt and pepper
4 flour tortillas
1/2 cup cooked cabbage
1/4 cup crumbled low-fat cottage cheese
2 tbsp ranch seasoning
1/4 cup grated cheddar cheese
1/4 tsp aniseed powder (for authenticity)
extra flour tortilla (for cheese lace)


Instructions

Heat oil in a skillet over medium heat; pat chicken dry, form into a thick patty. Flatten with a spatula, cook for 4 minutes per side until golden and fully cooked. Season with garlic powder, paprika, and chili powder.
In a small bowl, mix cottage cheese, ranch seasoning, and 1 tbsp water until smooth. Set aside.
Simmer tortilla with oil 10 seconds per side until warm and pliable. Layer with cabbage, cooked chicken, and dill pickles.
To make cheese lace: Spread a tortilla with a thin layer of olive oil. Sprinkle grated cheddar along the middle. Fold tortilla like a fan, bake at 400°F (200°C) until cheese crackles and turns golden (3-5 minutes). Break apart lace and place on tacos.
Drizzle ranch sauce and garnish with fresh dill (optional). Serve immediately.
