Ingredients
2 homemade pie crusts (without lard)
1/4 teaspoon lemon zest
2 tablespoons fresh lemon juice
11 large apples (about 5 pounds before peeling)
3/4 cup packed brown sugar
3/4 cup granulated white sugar
Instructions
Preheat oven to 375°F (190°C)
Zest 1 lemon into a large mixing bowl
Press 2 tablespoons of lemon juice from the zested lemon and add to the bowl
Core and peel all 11 apples one at a time to avoid burning the apples
Slice apples into 1/8-inch rounds and place in the bowl
Toss apple slices with lemon zest and juice
In a separate bowl, mix brown and white sugars
Arrange a portion of apple slices in the bottom crust, ensuring even spacing
Sprinkle half the sugar mixture over the apples
Top with the second crust, trim and crimp edges to seal
Cut 3-4 slits in the top crust for steam release
Brush egg white glaze (1 egg white mixed with 1 tablespoon honey) over the crust
Bake for 55 minutes until golden, rotating halfway
