A French-influenced British dessert combining the delicate aroma of Earl Grey tea and floral lavender. This creamy, aromatic cake features a firm center, a crumbly top, and is complemented by a subtle infusion syrup.
Ingredients
12 g Earl Grey (powdered)
2 g dried lavender (powdered)
282 g all-purpose flour, sifted
140 g softened butter
100 g powdered sugar
Instructions
Sieve the Earl Grey and lavender to remove stems and bristles.
Combine the powdered sugar and softened butter in a bowl until smooth.
Incorporate the sifted flour, mixing until a homogenous dough forms.
Transfer to a raised stainless steel mold and smooth the surface.
Preheat oven to 175°C (350°F), bake for 40 minutes.
After baking, create small holes in the surface and drizzle with a lavender-earl grey infusion syrup (custom recipe).
Notes
Use a raised stainless steel mold for even baking.
Drill small holes in the cake to allow the infusion syrup to absorb evenly.
Store in a hermetically sealed container for up to 4 days in the fridge.
Variation: Substitute Earl Grey with brewed green tea for a more vegetal aroma.
