Ingredients
2 chicken breasts, cubed or sliced
350g fettuccine or long pasta
3 garlic cloves, minced
150ml thickened cream (cornstarch thickened)
50g parmesan, grated
1 lemon (zest + juice)
1 tbsp olive oil
3 sprigs fresh thyme or parsley (optional)
Salt and pepper
Instructions
Heat olive oil in a pan and sauté garlic until fragrant
Sear chicken cubes in batches until golden (4-5 minutes)
Add cream, lemon juice, zest, and thyme to saucepan
Whisk until smooth, add parmesan, and simmer for 3-5 minutes
Cook pasta al dente and drain
Toss cooked pasta with lemon cream sauce and seared chicken
Season and serve immediately

Simmer slowly to avoid souring from acidity
