Ingredients
6 large wheat tortillas
6 large eggs
1 cup cubed potatoes
1 cup shredded cheese
1/2 cup shredded chicken or turkey sausage
1/4 cup salsa
2 tablespoons softened butter
Salt and pepper
Instructions
Crack eggs into a bowl and beat slightly
Heat oil in a pan
Cook potatoes until crispy
Add and cook chicken/turkey sausage until fully cooked
Incorporate beaten eggs into the pan, sauté like scrambled eggs
Stir in shredded cheese until melted
Add salsa and mix lightly
Warm each tortilla briefly on a dry pan for 10 seconds per side
Fill each tortilla with egg-protein mixture
Wrap tightly and serve
Notes
Use whole wheat tortillas for higher fiber
Tofu can replace eggs for vegan option
Adjust salsa heat level to taste
