Ingredients
4 cups boneless, skinless chicken breast (900g), cut into 1.5-inch cubes
1/3 cup (80 ml) liquid honey
1/4 cup (60 ml) Dijon mustard
2 tbsp olive oil
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp salt
1/2 tsp ground black pepper
1 tsp dried thyme (or 2 tsp fresh)
1 red bell pepper, cut into 1.5-inch pieces
1 yellow bell pepper, cut into 1.5-inch pieces
1 red onion, cut into 1-inch thick rings
1 green bell pepper, cut into 1.5-inch pieces
Instructions
Cube chicken and place in a large bowl
Prepare marinade by whisking honey, mustard, olive oil, vinegar, garlic, salt, pepper, and thyme
Pour marinade over chicken; mix thoroughly and refrigerate for at least 30 minutes (ideally 1 hour)
Thread marinated chicken onto skewers, alternating with pepper and onion pieces
Preheat grill to high heat (around 450°F/230°C)
Lightly oil grill grate to prevent sticking
Grill skewers for 6-8 minutes per side or until chicken reaches 165°F (74°C) and vegetables show char marks
Brush with remaining marinade during last 2 minutes of cooking
Notes
For best results, soak bamboo skewers for 30 minutes before cooking
Marinating for 1 hour develops deeper flavor, but 30 minutes works in a pinch
Baste with reserved marinade during grilling for enhanced flavor
Serve with basmati rice or a mixed greens salad for a complete meal
Avoid using any raw chicken juice from marinade in final basting
