Ingredients
4 boneless, skinless chicken thighs
2 egg whites
1 tablespoon all-purpose flour (wet)
2 cups all-purpose flour (dry)
4 tablespoons gochugaru (Korean red pepper flakes) or smoked paprika
2 tablespoons smoked paprika
2 tablespoons garlic powder
1 teaspoon baking powder
3 cups ice water
2 tablespoons Japanese mayonnaise (Kewpie preferred)
1 tablespoon sriracha
4 brioche burger buns
Instructions
Preheat oil in a large skillet or wok to 350°C/360°F
In a shallow bowl, whisk egg whites, 1 tbsp all-purpose flour, and season with 1/2 tsp salt
Cube chicken thighs into 1.5-inch portions
In a separate bowl, combine 2 cups flour, 4 tbsp gochugaru, 2 tbsp smoked paprika, 2 tbsp garlic powder, and 1 tsp baking powder
Dip chicken pieces in egg white mixture, then press into seasoned flour until fully coated
Drain on paper towels for 5 minutes
In a third bowl, whisk ice water with remaining 1 tbsp flour
Quickly dip each chicken piece into the iced water mixture, then a final dusting of remaining flour
Fry in hot oil until golden (1st fry: 3-4 minutes)
Drain briefly, then fry a second time for 1-2 minutes until blistered and crispy
For the sauce: Whisk kewpie mayonnaise with sriracha and 1 tsp gochugaru
Toast buns in a pan, spread sauce on bottom bun, add chicken, lettuce, and top bun
Notes
The iced water creates a unique airy crust without custard-based batter
For less heat, reduce gochugaru to 2 tablespoons and add 1 tbsp brown sugar
Use a candy thermometer for precise oil temperature
Rest chicken on wire racks post-frying to maintain crispness
Kewpie mayonnaise can be replaced with regular mayonnaise
