Ingredients
4 cups butternut squash, cut into 2.5 cm cubes
450 g (1 lb) lean ground turkey
1 cup medium durum wheat couscous
3 cups Swiss chard, finely chopped
1 tablespoon maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 clove garlic, minced
2 tablespoons olive oil
Salt to taste
Pepper to taste
Instructions
Preheat oven to 200°C (390°F)
Toss butternut squash with olive oil, cinnamon, nutmeg, salt, and pepper on a baking sheet
Roast for 30-35 minutes until squash is tender and golden
Heat 1 tablespoon olive oil in a skillet, cook ground turkey until browned
Add minced garlic and maple syrup, stir to combine
Prepare couscous as per package instructions
Steam Swiss chard until wilted
Assemble the dish by combining roasted squash, turkey mixture, cooked couscous, and Swiss chard
Notes
Use a store-bought couscous labeled ‘no added fats’ to ensure it doesn’t contain lard
Swap Swiss chard with cooked spinach or kale if preferred
Grill the butternut 20 minutes before adding turkey for deeper flavor
