Ingredients
Butter, softened
Dark chocolate (60% cocoa), tempered
Eggs, room temperature
Granulated sugar
Egg yolks

Instructions
Preheat oven to 220°C (425°F)
Prepare ramekins by greasing with butter and dusting with a thin layer of sugar
Melt butter in a microwave-safe bowl
Add chopped dark chocolate and stir until fully melted
Whisk eggs and egg yolks with granulated sugar until slightly foamy
Fold melted chocolate-butter mixture into the egg mixture gently
Spoon batter into prepared ramekins, filling each about 75% full
Bake for 12-14 minutes until edges firm but center remains visible on top
Allow to rest for 1-2 minutes before serving to set the lava center
Notes
Use a dark chocolate with 60% cacao minimum for optimal flavor
Check doneness by gently shaking the pan – desirable lava center should hit a 1-2 second wobble
Serve immediately while center remains molten with a scoop of vanilla ice cream or a dusting of cocoa powder
