Stuffed Cabbage Rolls with Lentils and Rice

Description

A healthy, halal-friendly vegetarian reimagining of traditional cabbage rolls. These delicate bundles feature a spiced lentil-and-rice filling in tender blanched cabbage, topped with a zesty homemade tomato sauce for a balanced, nutrient-rich meal.


Ingredients

1 cup (200g) brown/vegetable lentils, cooked and drained
1 cup (180g) basmati or white rice, cooked
1 small head green cabbage (around 1 kg), leaves separated
1 1/2 cups (375ml) sun-dried tomatoes in oil, chopped
1 medium onion, diced
4 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
8 tbsp olive oil (divided use: 3 tbsp for cabbage; 2 tbsp for farce; 3 tbsp for sauce)
2 tbsp vegetable stock or water
Salt and pepper to taste


Instructions

Blanch cabbage leaves: Boil 6 cups water, add salt, pour 1.5 tbsp olive oil, add leaves (5-6 at a time), simmer 3 minutes, drain.
Prepare farce: Sauté 1 chopped onion and 2 minced garlic cloves in 2 tbsp oil until translucent. Mix with lentils, rice, cumin, paprika, 1 tbsp oil, and salt/pepper.
Stuff cabbage rolls: Spread 1 tsp oil on a baking dish. Place blanched leaves flat, add 2 tbsp farce to each, roll tightly, tuck ends, place seam-side down.
Create sauce: Sauté remaining onion and garlic in 3 tbsp oil until golden. Add tomatoes, seasonings, stock, and simmer 10 minutes.
Bake: Pour sauce over rolls, cover with foil, bake at 375°F (190°C) for 30 minutes. Uncover and bake 10 more minutes.
Rest and serve: Let rest 10 minutes, slice, and drizzle remaining sauce over each portion.

Notes

Use tight cabbage leaves for better stuffing. Adjust farce consistency with vegetable broth if needed. Letting the rolls rest overnight in the sauce enhances flavor. This recipe is naturally pork-free and uses halal alternatives where applicable.
