Ingredients

250g (1 cup) cottage cheese (4% fat)
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
3 tbsp olive oil
1 cup fresh spinach (chopped)
100g (1/2 cup) shredded mozzarella
3 tbsp water
1 tbsp poppy seeds (optional, for topping)


Instructions

Preheat a non-stick skillet to medium heat. In a large bowl, mix cottage cheese, olive oil, baking powder, and water until smooth. In another bowl, combine flour and salt. Add dry ingredients to the wet mixture and stir until a sticky dough forms. Fold in spinach and mozzarella. Divide dough into 4 equal portions. Roll each portion into a flat disc (about 6 inches in diameter). Cook on the skillet for 2-3 minutes per side until golden and crisped. Optional: Sprinkle poppy seeds on top during the last minute of cooking.

Notes

For a richer texture, use 4% fat cottage cheese. Olive oil adds moisture and prevents dryness. Poppy seeds are optional but enhance the crust’s flavor. Store in an airtight container for up to 2 days.
