Ingredients
1 lb (450g) boneless, skinless chicken breasts
2 tablespoons olive oil (virgin)
2 cups chopped onion
2 cups sliced red bell pepper
4 garlic cloves, minced
2 tablespoons Cajun seasoning (no salt added)
1 (24 oz) jar marinara sauce
1 cup skim milk
1 cup heavy cream
2 cups grated Parmesan cheese
1 lb (450g) penne pasta
Salt and pepper to taste
1 tablespoon fresh lemon juice
Instructions
Heat olive oil in a skillet over medium-high heat; sear chicken breasts 2-3 minutes per side until golden, then transfer to crock pot.
Add chopped onion, bell pepper, and minced garlic to the crock pot.
Stir in Cajun seasoning, marinara sauce, skim milk, and heavy cream.
Cover and cook on low for 5 hours or high for 3 hours.
In the last 20 minutes of cooking, add grated Parmesan cheese and penne pasta, stirring to coat.
Season with additional salt and pepper, then finish with fresh lemon juice before serving.
Notes
For richer flavor: add 1 tablespoon of olive oil with the veggies. Substitute smoked paprika for the Cajun seasoning for a non-spicy version. Leftovers keep refrigerated for 3-4 days.
