A legendary italo-American chopped salad with crisp romaine, iceberg, tender chickpeas, creamy mozzarella, and halal-certified salami, bound by a robust pecorino-dijon vinaigrette. Perfectly balanced textures and flavors in every bite.
Ingredients
1 head iceberg lettuce, finely chopped
1 head romaine lettuce, finely chopped
1 can (15 oz) chickpeas, drained and rinsed
8 oz fresh mozzarella, cubed
100g halal-certified salami (turkey or beef alternative), sliced
1/3 cup extra virgin olive oil
3 tbsp red wine vinegar
2 garlic cloves, minced
3 tbsp Dijon mustard
50g grated Pecorino Romano cheese
5 tbsp chopped fresh parsley
Salt to taste
Pepper to taste
Instructions
Finely chop iceberg lettuce and romaine lettuce
In a large bowl, combine lettuce, chickpeas, mozzarella, salami, and parsley
In a separate small bowl, whisk together olive oil, red wine vinegar, garlic, Dijon mustard, Pecorino Romano, salt, and pepper
Pour vinaigrette over salad and toss gently
Adjust seasoning if needed
Serve immediately or refrigerate for 30 minutes to let flavors meld
Notes
For halal/vegetarian version: Replace salami with marinated mushrooms or grilled tofu
Use parchment paper when chopping lettuce to keep work surfaces clean
The dressing can be made 1 day in advance and stored refrigerated
