Ingredients
2 medium sweet potatoes
2 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon paprika (smoked optional)
1 teaspoon fine salt
1 tablespoon cornstarch
Instructions
Preheat oven to 220°C (425°F)
Peel and cut sweet potatoes into ½-inch sticks
Soak in cold water for 15 minutes, drain and pat completely dry
Toss with cornstarch until fully coated
Sprinkle with garlic powder, paprika, and salt
Arrange on a parchment-lined baking sheet
Drizzle with olive oil and toss to coat
Bake 20 minutes, flip, bake 10 more minutes until golden and crisp
Notes
Soaking removes surface starch for crispier results
Ensure potatoes are completely dry before baking
Optional: add a pinch of cayenne pepper for mild heat
