Ingredients
1 3/4 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup softened butter, room temperature
2 large eggs, room temperature
1/2 cup whole milk (or almond milk if desired)
1 tsp vanilla extract
50g colorful sprinkles
1 tsp baking powder
1/2 tsp salt
Instructions
Preheat oven to 350°F (180°C)
Line cupcake cases with paper liners (12 cavities)
In a large bowl, whip softened butter and sugar for 3-4 minutes until pale and fluffy
Add eggs one at a time, beating well after each addition
Stir in vanilla extract
In a separate bowl, whisk flour, baking powder, and salt
Gradually add the dry ingredients to the butter mixture in two batches, alternating with milk
Add colorful sprinkles and gently fold into batter using a silicone spatula
Fill cupcake liners 2/3 full with the batter
Bake for 20 minutes, rotating halfway through
Cool cupcakes in pan for 5 minutes before transferring to wire rack to cool completely
Notes
Ensure all ingredients are at room temperature for optimal volume. Use non-aluminum baking powder if you want a milder flavor and longer shelf life. Cups filled too full may spill during baking. Store in an airtight container for up to 3 days at room temperature.
