Crispy broccolini cheese patties made with tender broccoli, melting cheddar, and flavorful parmesan. A healthy, protein-rich vegetarian snack or main dish with a golden crust.
Ingredients
4 cups broccoli florets, finely chopped after cooking
1 cup grated cheddar
1/2 cup grated parmesan (or substitute Grana Padano)
1/4 cup flour (or almond flour)
2 beaten eggs for breading
Instructions
Steam broccoli florets until tender (5-7 minutes). Cool and finely chop
In a large bowl, combine chopped broccoli, cheddar, parmesan, and flour
Mix until a cohesive dough forms
Form into 1-inch thick patties (about 4-6 per serving)
Heat oil in a skillet over medium heat. Dip each patty in egg, then press into remaining flour mixture
Cook galettes 3-4 minutes per side until golden brown
Drain on paper towels and serve warm
Notes
For a lighter crust, use almond flour (adds a subtle nutty flavor)
Cheddar cheese can be reduced by 1/4 cup for a less rich version
Best served fresh, but store in an airtight container for 2-3 days
