Description
A hearty main dish with tender sirloin cubes and golden potatoes, cooked in one pan with butter-herb sauce. Ready in 30 minutes with restaurant-quality results.
Ingredients
700g top sirloin, cubed (2cm)
700g Yukon Gold potatoes, halved or quartered
4 tbsp olive oil (divided)
4 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp Italian seasoning blend
1 tsp salt
1/2 tsp black pepper
10g fresh parsley, chopped
4 tbsp flour (optional breading)
Instructions
Preheat skillet over medium-high heat and add 2 tbsp olive oil
Pat steak cubes dry and season with salt, pepper, and half the flour
Sear steak 1-2 minutes per side until browned
Add potatoes and remaining olive oil, cook 5 minutes to brown edges
Stir in garlic, herbs, and butter
Reduce heat to medium, cook 6-8 minutes until potatoes are golden and meat is 130°F (rare) to 145°F (medium)
Finish with parsley, tossing to coat
Notes
For crispier potatoes, add salt when boiling water before roasting
Use ghee instead of butter for lactose-free version
Leftovers keep in airtight container 3 days
