Description

A Korean rolled omelette with a dense, tender texture and vibrant colors from finely chopped vegetables. Served as a banchan or main dish, it features layers of cooked eggs, halal-friendly turkey or substitute, and aromatic seasonings, rolled compactly for elegant slicing.


Ingredients

6 large eggs
45g halal turkey (or substitute) finely chopped
45g grated carrot
1 green onion (white and light green parts, finely chopped)
1/4 tsp sea salt
1/2 tsp sugar
1/8 tsp black pepper
1.5 tsp sesame oil
1 tbsp neutral oil (for cooking)


Instructions

Crack and beat eggs in a bowl until slightly frothy
Stir in halal turkey, carrot, green onion, sea salt, sugar, black pepper, and sesame oil
Heat neutral oil in a non-stick skillet over low heat
Pour 1/3 of the egg mixture into the pan and softly tilt to cover the surface
Cook gently until the base sets and edges lift easily (avoid browning)
Using a spatula, carefully roll the omelette around a silicone brush or spoon to form a tight cylinder
Unwrap and repeat with remaining egg mixture to create a second layer
Clean the spatula edge and roll both layers tightly into a compact cylinder
Slice into 1-inch pieces and serve warm or at room temperature

Notes

Use a non-stick pan and maintain low heat to prevent burning
Adjust severity by adding chili pepper flakes
Can be wrapped in rice paper and served as banchan (condiment)
Store leftovers in an airtight container in the refrigerator for up to 3 days
