Description
Crunchy dark chocolate shells encase frozen blueberry bites coated in creamy, sugar-free Greek yogurt. A no-bake, low-glycemic dessert with natural antioxidants that satisfies sweet cravings without refined sugar or artificial ingredients.
Ingredients
1 cup fresh blueberries (rinsed)
1/2 cup (120 ml) plain non-dairy (lactose-free) Greek yogurt
100 g 80% dark chocolate (or cacao powder for custom melt)
Fleur de sel (optional, 1 pinch)
Instructions
Prep a 12-oz bowl with parchment paper for freezing
Toss blueberries with non-dairy Greek yogurt in a bowl
Transfer 1 tbsp yogurt-blueberry mixture to parchment bowl
Freeze portions for 2 hours
Melt dark chocolate using double boiler method (120°C/250°F melt, 95°C/200°F hold)
Quickly dip frozen blueberry bites in melted chocolate (2 seconds per side)
Let chocolate set for 3-5 minutes at room temperature
Dust with flake salt before serving
Notes
For frozen berries, add an extra 2-3 tbsp yogurt for better texture balance
Replace chocolate with 3 tbsp dark cacao powder + 2 tbsp rice syrup for raw method
Store in airtight container at room temperature up to 3 days
Caution: Chocolate hardens rapidly when contacting cold food, handle quickly during coating
