Ingredients
225 g capellini (angel hair pasta)
2 lemons, juiced and zested
3 tablespoons extra virgin olive oil
2 tablespoons salted capers, rinsed
1 garlic clove, minced
1 small red onion, finely chopped
1 cup cherry tomatoes, halved
Salt to taste
Freshly ground black pepper
Instructions
Bring a large pot of salted water to boil
Cook capellini 2 minutes less than package instructions until al dente
Transfer to a colander, rinse with cold water to stop cooking
Toss pasta with lemon zest and juice, olive oil, capers, garlic, red onion, and cherry tomatoes
Season with salt and black pepper to taste
Let sit 5-10 minutes for flavors to meld
