Description
Crunchy roasted cauliflower bowls topped with seasoned ground turkey, melted cheddar, turkey bacon, avocado, sour cream, and green onions. A low-carb, high-protein alternative to mashed potatoes with bold flavors and satisfying textures.
Ingredients
1 large head cauliflower, cut into florets
2 tbsp olive oil
500g ground turkey
1 cup grated cheddar cheese
6 slices turkey bacon
1 avocado, sliced
2 tbsp sour cream
Oregano, salt, pepper
1 tsp paprika
1 tbsp chives or green onions
1 tsp garlic powder
Instructions
Preheat oven to 200°C (20 minutes)
Toss cauliflower florets with olive oil, paprika, salt, and pepper
Spread on lined baking sheet and roast 20-25 minutes until golden
Cook turkey in pan over medium heat until browned, stir in spices
In last 5 mins of roasting, place turkey bacon on oven rack to crisp
Layer roasted cauliflower in bowls with turkey mixture and cheddar
Top with crispy bacon, avocado slices, sour cream, and chives
Notes
For extra texture, toss cauliflower with 2 tbsp almond flour before roasting
Bake turkey mixture ahead and refrigerate up to 3 days
Add steamed broccoli or roasted carrots for extra veggies
Sauce: Mix remaining olive oil, garlic, and chives as optional drizzle
