Ingredients

1.9 L (8 cups) water
155g (3/4 cup) white tapioca pearls
2 cups full-fat coconut milk
1/2 cup ripe mango puree (from 1 mango)
2 tablespoons honey (agent sucrant naturel)


Instructions

Bring water to a boil and cook tapioca pearls for 7-8 minutes until translucent
Drain and rinse pearls with cold water
In a saucepan, warm coconut milk over medium heat without boiling
Stir in mango puree and honey until fully combined
Mix in cooked tapioca pearls and cool to room temperature
Refrigerate for at least 2 hours to set
Serve chilled, optionally add fresh mango chunks before serving

Notes

Use ripe mango for maximum sweetness
Soak tapioca pearls in cold water for 30 minutes before cooking if desired.
To enhance visual appeal, add spherical mango slices to the final dish.
Store in an airtight container in the refrigerator for up to 2 days.
