Description

Luscious French fruit jellies made with fresh orange and pomegranate juice, sugar, and natural pectin. Their silky texture is enrobed in a delicate sugar crust for a refined sweet treat. Ideal for holiday gifts or coffee pairings.


Ingredients

2 cups (500 ml) orange and pomegranate juice, fresh pressed and strained
1 cup (200 g) granulated sugar
2 tablespoons (10 g) natural pectin
1 teaspoon lemon juice


Instructions

Measure all ingredients precisely
In a large pot, combine juice, sugar, and pectin
Stir over medium heat until sugar dissolves
Add lemon juice
Bring to a boil and hold at 106°C (223°F) for 25 minutes
Pour into a greased cake pan, let cool to 37°C (98.6°F)
Remove from pan and cut into 36 squares
Dust with extra sugar and dry for 5-8 hours

Notes

Use a sugar thermometer for precise temperature control
Replace juice with seasonal fruits like cherry or apple
Store in an airtight container for up to 1 month
Test with a small pan first for optimal jellification
