Description
Creamy Tuscan-style chicken pasta with al dente penne, seared chicken, sun-dried tomatoes, spinach, and parmesan. A balanced blend of rich sauce and fresh herbs.
Ingredients
2 chicken breasts
340g penne pasta
500ml heavy cream (30% fat)
100g grated Parmesan
30g sun-dried tomatoes
50g fresh spinach
2 cloves garlic
2 tbsp olive oil
1 tbsp Italian herbs
Salt and pepper
Instructions
Cook pasta in salted boiling water until al dente
Heat olive oil in pan, sauté garlic until fragrant
Sear chicken breasts (3-4 min each side), set aside
Add sun-dried tomatoes and herbs to pan, cook 2 min
Stir in cream and Parmesan until sauce thickens
Return chicken to pan, simmer 3 min
Add fresh spinach and wilt
Toss sauce with cooked pasta
Notes
Chicken thighs yield more tender results
Rigatoni or farfalle may replace penne
Freshly grated Parmesan ensures better emulsion
