Ingredients

450 g ground beef (80% meat, 20% fat)
1 large yellow onion
8 sourdough bread slices
8 Swiss cheese slices
4 sharp cheddar cheese slices
2 tablespoons softened butter
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Preheat skillet over medium heat
Finely dice onion; sauté in butter slowly
Caramelize 35 minutes until golden brown, soft
Shape beef into 4 patties with thumb indent
Season with salt and pepper
Cook patties 4-5 minutes per side
Warm bread slices in oven
Butter one side of each slice
Create sandwiches: meat + onion + cheese
Press sandwiches gently with spatula
Grill 1-2 minutes until cheese is fully melted
