Description

Tuscan creamy ravioli combines the richness of cream, sun-dried tomatoes, and Parmesan in a quick, restaurant-quality dish. This easy recipe features a velvety sauce perfected by chicken broth and herbs, with ravioli absorbing all the flavors for a luxurious texture.


Ingredients

Unsalted butter, 30 g (2 tablespoons)
Garlic, 3 cloves, minced
Tomato paste, 1 tablespoon
Chicken broth, 120 ml
Heavy cream, 240 ml
Smoked paprika, 1/4 teaspoon
Dried oregano, 1/4 teaspoon
Fresh basil, 15 g (1/2 bunch), roughly chopped
Parmesan cheese, 40 g, freshly grated
Sun-dried tomatoes, 125 g, finely sliced
Baby spinach, 100 g, washed and dried
Ravioli, 500 g (cheese or spinach-filled preferred)
Salt and pepper, to taste


Instructions

Melt the butter in a large skillet over medium heat, then sauté the garlic until fragrant but not browned. Add the tomato paste and cook for 1 minute to release its flavor. Stir in the chicken broth, heavy cream, smoked paprika, and oregano; let simmer gently for 2 minutes. Add the ravioli to the sauce, stirring carefully to coat. Cook until the ravioli are heated through, about 4 minutes. Toss in the sun-dried tomatoes and baby spinach, cooking until the greens wilt. Remove from heat, stir in half the Parmesan, and season with salt and pepper. Garnish with fresh basil and remaining Parmesan before serving.

Use vegetable broth for a vegetarian version
Parmesan can be replaced with nutritional yeast for a vegan option
Sun-dried tomatoes add intense flavor—adjust quantity if desired
