Ingredients
2 chicken breasts (boneless, skinless)
1 large avocado (ripe, sliced)
4 thick slices sourdough/ciabatta/country bread
2 tablespoons mayonnaise (or Greek yogurt)
1 tablespoon Dijon mustard
1 small red onion (thinly sliced)
1 large beefsteak tomato
Olive oil or butter (for grilling)
Salt and freshly ground pepper
Instructions
Preheat oven to 400°F (200°C)
Season chicken breasts with salt and pepper
Heat a skillet with olive oil or butter over medium heat
Cook chicken for 5-7 minutes per side until golden and just cooked through
Let chicken rest and then thinly slice diagonally
Assemble sandwiches: spread mayonnaise/mustard on bread
Layer with chicken slices, avocado pieces, tomato slices, and 2 cheese slices per sandwich
Grill in panini press or skillet over medium heat until bread is crispy and cheese is melted
Cut sandwiches in half
