A one-pan Mediterranean meal with juicy chicken, zucchini, and cherry tomatoes. Herbs and Parmesan create a flavorful, healthy dish perfect for busy weeknights.
Ingredients
4 boneless skinless chicken breasts (about 6 oz each)
2 medium zucchinis, sliced into half-moons
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup grated Parmesan cheese
3 tbsp olive oil
1 tbsp dried oregano
1 tsp smoked paprika
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 425°F (220°C)
Line a sheet pan with parchment paper
In a bowl, mix olive oil, oregano, paprika, basil, salt, and pepper
Brush mixture over chicken breasts
Arrange zucchini, red onion, and cherry tomatoes around chicken
Sprinkle Parmesan cheese evenly over chicken
Cover tightly with aluminum foil and bake for 25 minutes
Remove foil and bake uncovered for 10 minutes until golden brown
Notes
Use chicken thighs for more moisture
Substitute shaved Parmesan if preferred
Add sliced garlic cloves if available
Rest meat 5 minutes before serving
