Description
A simplified and healthy Greek street food dish made in a slow cooker with tender chicken breasts, garlic, lemon juice, apple cider vinegar, oregano, and served with homemade tzatziki yogurt sauce. Ideal for busy weeknights with minimal prep and hands-off cooking.
Ingredients
450 g (1 lb) skinless, boneless chicken breasts
3 cloves garlic, minced
60 ml (1/4 cup) fresh lemon juice
1 medium onion, finely diced
1 tbsp (15 ml) extra virgin olive oil
1 tbsp (15 ml) apple cider vinegar
1 tsp (2 g) dried oregano
Salt to taste
Greek yogurt sauce:
200 g (3/4 cup) plain Greek yogurt, non-fat or low-fat
1 cup grated cucumber
1 tbsp chopped fresh dill
1 small garlic clove, thinly sliced
Optional: 1 whole wheat pita for serving
Instructions
Place chicken breasts in the slow cooker with the onions.
Mix garlic, lemon juice, apple cider vinegar, oregano, and salt in a small bowl; pour over the chicken.
Add olive oil to the slow cooker and stir to combine.
Cover and cook on low for 6-8 hours.
Once cooked, shred the chicken with a fork.
Prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, and garlic.
Serve the chicken in pita pockets with tzatziki sauce or as a main dish beside rice or salad.
Notes
Fresh garlic and lemon juice enhance flavor the most.
Chicken thighs can be used instead for more moisture.
For best results, cook only on low setting to ensure tenderness.
Leftovers store well and reheat easily.
