Ingredients
1.5 lb (700g) chicken breasts or thighs
1 red bell pepper, diced
1/2 large yellow onion, chopped
2 garlic cloves, minced
4 tbsp creamy peanut butter
3 tbsp soy sauce (see notes)
2 tbsp honey
1 tbsp fresh lime juice
1 tsp grated ginger
1/2 tsp lime zest
1 tsp chili garlic paste (optional)
1 tbsp vegetable oil
Instructions
Heat oil in a skillet and brown chicken
Combine chicken, onion, garlic, and chili paste in the slow cooker
Add remaining ingredients (peanut butter to lime zest)
Cook on low for 4 hours or high for 2 hours
Garnish with chopped peanuts and cilantro before serving
Notes
Use coconut aminos for non-GMO soy sauce
Add broccoli or carrots during last 30 minutes of cooking
Thicker sauce: simmer in a pan after cooking
