Ingredients
450g ground beef (20% fat)
4 potato buns
4 slices American cheese
30g butter (softened)
Salt (to taste)
Freshly ground black pepper (to taste)
Instructions
Preheat a cast-iron skillet over high heat until smoking.
Form beef into 4 oval patties (1/8″ thick) using damp hands.
Season both sides with salt and pepper.
Place patties in skillet; smash with a patty shaper or flat metal spatula.
Cook 2 minutes per side for a caramelized crust.
Top patties with cheese slices during last 30 seconds of cooking.
Melt butter in skillet; toast buns cut-side down.
Assemble burgers with lettuce/tomato if desired.
Notes
Use fresh, never-frozen beef for best texture.
Cast-iron retains heat crucially for crust formation.
Substitute American cheese with cheddar or gouda if needed.
Brioche buns work as potato bun alternative.
Serve with fries and a side of salsa.
