Description
Soft, crackly-textured American biscuits with a cinnamon-sugar coating. The combination of cream of tartar and baking soda creates a tender interior that stays moist for days.
Ingredients
2 3/4 cups all-purpose flour
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup granulated sugar mixed with 2 teaspoons ground cinnamon
Instructions
Preheat oven to 350°F (175°C)
In a large bowl, cream butter and sugar using an electric mixer
Add eggs one at a time, mixing well after each
Add dry ingredients in two parts while mixing
Transfer dough to a work surface dusted with flour
Roll into 1-inch balls and roll each in cinnamon-sugar mixture
Place 2 inches apart on parchment-lined baking sheets
Bake 8-10 minutes until crackled and golden
Cool on wire racks before serving
Notes
For cleaner cracks, chill dough balls 10 minutes before baking
Use baking powder if cream of tartar unavailable
Store in airtight container up to 3 days
