A vegan, dairy-free strawberry sorbet made with fresh strawberries, sugar, and a touch of lemon acidity to enhance the fruit’s natural sweetness. This easy-to-make dessert offers a creamy texture and vibrant flavor with no added preservatives or animal products.
Ingredients
3 cups fresh or frozen strawberries (about 360g), hulled
1/4 cup (60g) sugar (use maple syrup, xylitol, or natural sweetener as alternatives)
2 teaspoons freshly squeezed lemon juice or grated lemon zest
1 pinch salt (optional, for flavor enhancement)
Instructions
1. If using fresh strawberries, freeze them until solid (at least 2 hours). If using frozen strawberries, reduce thawing to 10 minutes.
2. In a high-powered blender, combine strawberries, sugar, lemon juice, and salt (if using). Blend on high until smooth and creamy, scraping down sides as needed.
3. Taste and adjust sweetness by adding more sugar or lemon juice if desired.
4. Transfer mixture to an airtight container, smooth the surface, and freeze for 2-4 hours until firm.
5. Before serving, stir gently and scoop into bowls or cones.
Notes
Use ripe strawberries for the best flavor.
Freeze strawberries partially if using a regular blender to prevent over-thawing.
For a smoother texture, strain the mixture through a fine mesh sieve after blending.
Store in an airtight container in the freezer for up to 2 weeks.
Substitute sugar with 2 tablespoons pure maple syrup or 1 pitted date (soaked in warm water) for a sugar-free alternative.
