Description
A quick and authentic Vietnamese chicken pho soup made with a fragrant broth infused with star anise and ginger, tender shredded rotisserie chicken, and fresh lime for a comforting, healthy meal. Ready in 30 minutes.
Ingredients
1/2 tablespoon sesame oil
3 star anise
2 garlic cloves
1 teaspoon fresh ginger (grated or paste)
1.5 liters chicken broth
3 tablespoons low-sodium soy sauce
2–3 tablespoons hoisin sauce
1 teaspoon nuoc-mâm (fish sauce)
1 lime (freshly juiced)
1 jalapeño chili (seeded and sliced)
1 rotisserie chicken (shredded)
Instructions
Heat sesame oil in a pot over medium heat. Add star anise, garlic, and ginger, sauté for 1-2 minutes. Pour in chicken broth and stir. Add low-sodium soy sauce, hoisin sauce, fish sauce, lime juice, and jalapeño. Bring to a gentle simmer (5 minutes). Add shredded chicken and cook 5 more minutes. Serve hot with fresh herbs and lime slices (optional).
Notes
Use low-sodium chicken broth for better control of flavor. Substitute tamari for gluten-free soy sauce. For halal, confirm fish sauce is suitable. omit or reduce jalapeño for less heat.
