A classic dessert featuring light and buttery biscuits layered with fresh sugar-glazed strawberries, served with whipped cream. The ideal summer treat with a perfect balance of tender layers and juicy fruits.
Ingredients
2 cups all-purpose flour
1/4 cup (50g) granulated sugar (for the biscuit)
1 tablespoon (15g) baking powder
cold unsalted butter (1/2 cup / 115g), cut into cubes
2/3 cup (160ml) whole milk
fresh strawberries (6-8 medium-sized, about 500g)
1/4 cup (50g) granulated sugar (for macerating strawberries)
6 oz (180ml) heavy cream
2 tablespoons granulated sugar (for whipped cream)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper
Whisk together flour, 1/4 cup sugar, and baking powder in a large bowl
Add cold butter cubes; use a pastry blender to mix until it resembles coarse meal
Stir in milk until just combined; avoid overmixing
Let dough rest for 10 minutes
Form into 6 equal circles and place on prepared baking sheet
Bake for 12-15 minutes until golden brown
While biscuits cool, hull and slice strawberries
toss strawberries with 1/4 cup sugar and let sit 10 minutes to macerate
In a chilled bowl, whip heavy cream with 2 tbsp sugar until stiff peaks form
Assemble: Place each warm biscuit on a plate, top with strawberries and whipped cream
Notes
Chill dough for 30 minutes before baking for flakier results
Use a stand mixer with paddle attachment for easier dough handling
Mango or raspberries can be substituted for seasonal variations
Best served immediately to prevent biscuits from softening
