Ingredients
300g high-protein bread flour (Type T45/T55)
120g steamed and drained pumpkin puree
35g granulated sugar
30g instant yeast
2 large eggs
120g softened unsalted butter
50g fine grain sugar (dextrose optional) for coating
1tsp ground cinnamon
1/2tsp nutmeg
Instructions
Sift flour, yeast, and half the sugar into mixing bowl
Create well and add pumpkin, eggs, and 2 tbsp warm milk
Knead for 8 minutes until smooth dough forms
Let rest 10 minutes in warm place
Work in cold butter until fully emulsified into dough
Proof dough until doubled (1 hour at 27°C)
Roll dough to 1cm thickness and cut 6cm strips
Twist each strip 3-4 times into rope candy shape
Fry in 180°C oil until golden (2-3 min per side)
Roll in sugar mix and let cool completely
Notes
Use steamed pumpkin (not canned) for fresher flavor
Opt for T55 flour if T45 unavailable for stronger gluten
Work quickly with dough as butter must stay cold
